Harvest Salad featuring 5 types of squash

There’s so much delicious local produce out this time of year! Tony Serafino from Armata’s Market in Longmeadow showed us how to make a Harvest Salad.

Ingredients

Salad:
1 cup of Blue Hubbard Squash
1 cup Butternut Squash
1 cup Acorn Squash
1 cup Buttercup Squash
1 cup Delicata Squash
1/2 cup Quinoa

Dressing:
8 TBLS Mapp Pure Maple Syrup
1 Heaping TBLS Raw Honey
4 TBLS Apple Cider Vinegar
1 cup Apple Cider
