Thanksgiving Burrito

CHICOPEE, Mass. (Mass Appeal) – On Black Friday, you have more leftovers than you know what to do with, so we got creative! Blogger Dan Whalen from showed us how to make a Thanksgiving Burrito.

The Thanksgiving Burrito

Cran-Apple Salsa
12 Ounces Cranberries
2 Apples
2 Cloves Garlic
1 Lime
2 Tablespoons Honey
1 Red Onion

The rest
Cornbread Stuffing
Pinto Beans
Roasted Onion, Pepper, and Squash
Corn Salsa
Sour Cream

1.Pulse the cranberries and apples in smallish batches in the food processor to mince but not puree. Dice the onion and grate the garlic. Juice the lime. Toss everything into a large bowl and mix well.
2.The burrito itself has cornbread stuffing, pinto beans, roasted onion, pepper, and squash, turkey, corn salsa, cranberry salsa, cheese, and sour cream.
