Salmon Cakes with a Fall Salad

Salmon cakes:

  • Red salmon
  • Chickpeas
  • Breadcrumbs
  • Olives
  • Roasted red peppers
  • Capers
  • Parsley
  • Lime juice
  • Hot sauce
  • Cumin
  • Salt
  • Egg whites
  • Vegetable oil

Fall salad

  • Kale
  • Swiss chard
  • Beet greens
  • Carrots
  • Apples
  • Beets
  • Lemon zest
  • Celery seed
  • 2 tbsp sugar or Honey
  • White vinegar
  • Salt and pepper

Wash and tear all greens… grate apples beets and carrots place in bowl add remaining ingredients mix well and then toss with greens…
