Try these easy, healthy, protein-packed breakfasts!

CHICOPEE, Mass. (Mass Appeal)  Gear up for your day or your workout with these tasty breakfasts!  Jessica Brothers, Nutritionist & Owner of The Fit Club in Palmer showed us how to make a few beautiful breakfasts!

Quick and Easy Protein Pancakes

  • 1 ripe banana
  • 2 eggs
  • 1 cup almond meal
  • 1t vanilla extract
  • 1T cinnamon
  • coconut oil, for cooking

Now, let’s make it…

  • You may use a griddle, griddle pan, or any flat pan
  • Heat on med/low heat with some coconut oil, enough to cover cooking area
  • In a bowl mash up the banana, i like to leave it on the chunkier side
  • Stir in all the remaining ingredients, adding or subtracting to your taste or desired consistency
  • Pour desired batter amount onto heated coconut oil*, to form your pancakes
  • Flip when edges come up clean, and cook a few more minutes
  • Serve warm with pure maple syrup or a fruit topping

Oat & Nut French Toast with Fried Bananas

  • 2 eggs
  • splash of unsweetened Almond milk
  • 4 slices Cinnamon Raisin Ezekiel Bread
  • 1T cinnamon
  • 1t vanilla extract
  • 1 c quick cook oats
  • 1 c nuts of choice, I use walnuts, chopped small
  • 1 ripe banana
  • 1T grass fed butter
  • coconut oil, for cooking

Now, let’s make it…

  • Heat up your griddle coated in coconut oil
  • In a small bowl, crack eggs and beat with the cinnamon and vanilla
  • On a plate, mix together the oats and nuts
  • One piece at a time, dip bread completely in the egg mixture and then coat it in the dry oat and nut mixture, place on griddle
  • Repeat until all slices of bread are completed and cooking
  • Meanwhile…In a small sauté pan, add butter over med/low heat
  • Slice banana and add to hot butter pan
  • Sauté until one side is browned and then flip, cooking other side until browned
  • Back to griddle…Flip french toast when it reaches your desired doneness, to cook other side
  • When finished, top toast with fried bananas and real maple syrup
