CHICOPEE, Mass. (Mass Appeal) – Apple season has arrived! We honored the occasion by making a savory apple dish, apple chutney! Personal Chef Bill Collins from ChefBill.com showed us how to make it.
¾ cup brown sugar
¾ cup distilled white vinegar
¼ cup water
2 apples (Granny Smith, Gala, Fuji, etc.) peeled and cut in ¼-inch pieces
1 small onion, peeled and minced
½ cup raisins
1 tablespoon fresh ginger, peeled and grated
½ teaspoon mustard seeds, whole, or ¼ teaspoon ground
¼ teaspoon red pepper flakes (optional)
- Combine sugar, vinegar, and water in a saucepan; bring to a boil, stirring until sugar dissolves
- Add remaining ingredients, except the red pepper flakes, and simmer, uncovered, until syrupy and slightly thickened, approximately 30 minutes to 1 hour. Stir occasionally.
- Add the red pepper to taste.
Makes approximately 2 cups
