Sweet Potato Chocolate Mousse

CHICOPEE, Mass. (Mass Appeal)  Get your chocolate fix for a fraction of the calories!  Jessica Brothers, Nutritionist & Owner of The Fit Club in Palmer showed us how to make Sweet Potato Chocolate Mousse.

Sweet Potato Chocolate Mousse

  • 2 cups Sweet potatoes
  • 3/4 cup pitted dates, soaked in warm water for 10 min
  • 2T almond butter
  • 3/4 cup unsweetened Almond milk
  • 1/2 cup cocoa powder
  • 1t pure vanilla extract
  • 3T flaxseed meal
  • 1/2t ground cinnamon (optional)

Make it:

  • Drain dates from soaking water, squeezing out any excess liquid
  • In a food processor or high speed blender, add dates and all other ingredients
  • Purée until well combined and creamy
  • Refrigerate in an airtight container overnight to chill
  • You can store for up to 3 days or freeze for up to 5 days
  • Get Creative! Use as a pie filling – pour into baked pie crust and chill overnight before
