Grilling week: stuffed burgers

CHICOPEE, Mass. (Mass Appeal) – Continuing Grilling Week on Mass Appeal, we headed outside to cook up some Stuffed Burgers. Chef Bill Collins from chefbill.com showed us how.

Stuffed Burgers

1 ½ pounds ground beef, 85% lean
1 teaspoon salt
½ teaspoon black pepper

Burger Fillings:
Crumbled bleu cheese
Shredded cheddar cheese
American cheese
Sautéed portabella mushrooms and caramelized onions
Bacon and cheddar or bleu cheese

Preheat a skillet on a high heat, or a grill, for direct cooking, to medium-high

Method #1
1. Mix the salt and pepper into the burger, and divide the meat into 6 equal portions
2. Flatten each portion until it’s slightly larger than your hamburger roll
3. Make an indentation in the middle of each burger, and place up to two tablespoons of filling into the center.
4. Fold over the sides of the beef until it covers the filling, and gently flatten the burger until it’s slightly smaller in diameter than your hamburger roll.
5. Cook to your liking, approximately 3-4 minutes per side for medium-rare, 5 minutes per side for medium.
6. Let the burgers rest for 5 minutes before serving.

Makes 6 burgers

Method #2
1. Mix the salt and pepper into the burger, and divide the meat into 12 equal portions
2. Flatten each portion until it’s approximately the same size as your hamburger roll
3. Place up to two tablespoons of filling into the center of 6 burgers.
4. Place the remaining burgers on top of the filled ones, and gently pinch around the sides until the filling is sealed inside.
5. Cook to your liking, approximately 3-4 minutes per side for medium-rare, 5 minutes per side for medium.
6. Let the burgers rest for 5 minutes before serving.
