Avocado toast with a Mediterranean twist

CHICOPEE, Mass. (Mass Appeal) – It’s a delicious snack that is easy to make and full of flavor!  Annabelle Lytle-Rich from Shelburne Falls Coffee Roasters showed us how to make avocado toast.

Avocado Toast

2 Slices of country white bread
1 avocado
Juice of 1 lemon
1 clove of garlic
1 handful of fresh mint (torn)
2 tbs feta cheese
Coarse Salt
Cooking Directions: Finely chop the garlic and add to lemon juice. Put aside. Slice avocado in half, remove pit and slice into bite sized pieces. Place pieces in a small mixing bowl. Pour lemon and garlic mixture over avocado, gently fold in mint and coarse salt to taste, allowing avocado bites to keep their shape. Toast bread. Top bread with half of the avocado mixture over each toast. Sprinkle salt to taste add finish with feta cheese.
