Sweet potato protein muffins

It’s healthy, simple to make, and perfect to take on the go! Joining us with a recipe for Sweet Potato Protein Muffins is Jessica Brothers, Nutritionist & Owner of the Fit Club in Palmer.

Sweet Potato Protein Muffins

– 1 cup almonds or almond flour
– 1 cup baked sweet potato, no skin
– 10 dates, soaked in hot water for 10 minutes
– 1 cup vanilla protein powder
– 3 organic eggs
– 1 tsp. pure vanilla extract
– 1 tsp. ground cinnamon
– 1 tsp. ground nutmeg
– 1/4 tsp. baking soda
– Pinch of sea salt
– Coconut oil for greasing

– Preheat the oven to 425°
– Poke sweet potato with fork and bake for 40 min or until fork soft
– Remove from oven, let cool, and remove skin
– Reduce oven heat to 350°
– Pulse the almonds in a food processor until finely ground
– Add the remaining ingredients in and pulse until all ingredients are fully combined
– Greases a 12 muffin tin generously with coconut oil
– Divide batter into muffin tin and bake for 15-20 minutes
