Sausage and Peppers
1 pound hot Italian sausage, cut into 1/2-inch pieces (if it is in bulk, just break it up)
1 pound sweet Italian sausage, cut into 1/2-inch pieces
2 26-ounce jars of marinara sauce
3 bell peppers (all green, or 2 green and 1 yellow), sliced
2 bay leaves
Italian seasonings (basil and oregano) to taste
3/4 cup red wine
In a frying pan, brown the sausage pieces. Transfer them to a large saucepan, and stir in the sauce, peppers, bay leaves, and seasonings.
Drain off the excess fat, if any, in the frying pan. Then deglaze the pan with the wine, and pour it into the saucepan with the sauce mixture.
Place the saucepan over low heat, cover it, and simmer, stirring occasionally, for at least 2 hours.
The sauce will be done when the peppers are soft. Ladle the sauce over thick spaghetti and serve with shredded Parmesan or Romano cheese.
Like most of its kind, this sauce is even better when prepared a day ahead.
