Israeli Salad and Hummus

CHICOPEE, Mass. (Mass Appeal)  Looking for a new healthy snack?  John Grossman, owner of the Holyoke Hummus Company showed us recipes for Israeli Salad and Hummus.

Israeli Salad

  • 6 Cucumbers
  • 4 Italian tomatoes
  • 1 cup chopped parsley
  • 1/2 cup of chopped cilantro
  • 1 Cup Olive Oil
  • 1/3 Cup Fresh Lemon Juice
  • 1 Tablespoon Salt

Dice the cucumbers and tomatoes. Chop the cilantro and parsley.Mix the olive oil, lemon juice and salt together for dressing.

Holyoke Hummus

  • 1 1/2 Dried Chickpeas soaked overnight yielding 1 quart
  • 1 1/4 Tsp Baking Soda
  • 1 1/4 cups tahini
  • 5 tbsp lemon juice
  • 5 cloves garlic
  • 1 cups water
  • 2 tsp salt
  • 1 tsp cumin

Cover soaked chickpeas with about an inch of water and boil with baking soda until tender. About an hour and a half.
Blend with other ingredients until smooth.
