CHICOPEE, Mass. (Mass Appeal) – Passover is one of the Jewish religion’s most sacred and widely observed holidays. Jeff Rembrant from the Jewish Community Center in Springfield showed us how to make a traditional Passover breakfast Matzo Brei.

4 pcs matzo
½ cup of Hot water
4 large eggs
Salt and pepper
4 tablespoons of butter
Break the matzo into small pieces and place in a mixing bowl
Pour the hot water over the matzo and let sit until the matzo are softened, then spill off the excess water
In another bowl beat the eggs adding the salt and pepper
Mix the eggs into the matzo
Melt the butter in a hot 12 inch frying pan
Add the matzo and egg mixture into the hot butter and mix like scrambled eggs for a few minutes, until the eggs are cooked through and the matzo starts to crisp up.
Plate the servings and serve with maple syrup, powdered sugar, or what we call Hannah’s way with cinnamon & sugar
