Make an English muffin burger

CHICOPEE, Mass. (Mass Appeal)  It’s almost burger season and  Dave Schrier from the Alvah Stone in Montague showed us how to make their house burger!

How to make the English Muffin:

1) Mix Starter:

  • 1 cup AP Flour
  • 1 cup water
  • 1 tsp dry active yeast

Allow to activate at room temperature for four hours

2) Mix the following in a larger bowl

  • Starter
  • 3 cups water
  • 3 3/4 cups AP flour
  • 1/2 tsp yeast
  • 1 T of salt
  • 1 T of sugar

Allow to rise at room temperature for another 4 hours

3) Refrigerate dough overnight

4) Pour onto a counter and dust with semolina flour

5)_Cut the muffins with a pastry cutter

6) Cook in a griddle with just a touch of oil until browned on both sides

7) Finish in a 350′ oven until fluffy and golden

To assemble the burger:

1) Craft a burger with 100% dry aged beef from River Rock Farm in Brimfield

2) Cut the muffin. One side spread with homemade mayonnaise, the other with a marmalade of caramelized red onions from Red Fire Farm

3) Melt some Grafton Village Aged Cheddar on top of the burger

4) Top with homemade pickle (Girard’s Valley View Farm)

House Burger

  • Dry aged beef from River Rock Farm in Brimfield
  • Homemade English Muffins
  • Onion marmalade
  • Gooey cheese
  • Homemade pickles
