Valentine’s Day salad

CHICOPEE, Mass. (Mass Appeal) – Salad can be romantic…when you add chocolate! Annabelle Lytle-Rich from Shelburne Falls Coffee Roasters shared a delicious Valentine’s Day salad recipe.

Valentines Day Salad

Two 4 oz pan fried chicken breasts (sliced)
6 ounces mixed greens
4 tablespoons goat cheese
½ cup sliced, toasted almonds
1 medium sized carrot
1 pomegranate (seeded)
10 (approx.) grape tomatoes
1 oz dark chocolate
½ cup honey balsamic vinaigrette (recipe below)

Diagonally slice each grape. Flip one side and realign to create a heart shaped tomato. Secure with a toothpick. Peel carrot. Using a knife, cut a v-shaped notch throughout the length of the carrot and remove the notch. Then use peeler to trim the sides and top into the shape of a heart. Evenly divide mixed greens on two plates. Top greens with goat cheese, toasted almonds, and pomegranate seeds. Place carrot and tomato hearts throughout the top of the salad. Coarsely grate dark chocolate over the salad. Finish with a drizzle of honey balsamic.

Honey Vinaigrette
2 Tbs balsamic vinegar
1 Tbs honey
¼ cup extra-virgin olive oil
¼ tsp mustard powder
Coarse salt and freshly ground pepper to taste
