Filet Mignon with smashed potatoes

Classic Steak House Rubbed Filet Mignon

Ingredients:
2 teaspoons black peppercorns
¼ teaspoon dried rosemary
1 teaspoon dry mustard
¾ teaspoon kosher salt
½ teaspoon garlic powder
4 (4ouonce) beef tenderloins steaks, trimmed (1inch thick)

Directions:
Place peppercorns and rosemary in a spice or coffee grinder: pulse until pepper is coarsely ground. Combine peppers mixture, dry mustard, salt and garlic power in a small bowl; rub evenly over both sides of steaks. Place steaks on a grill rack coated with cooking spray; grill 3 minutes on each side or until desired degree of doneness. Yield: 4 servings (serving size: 1 steak).

Grilled asparagus with lemon

Ingredients:
1 pound trimmed asparagus spears
1 teaspoon olive oil
¼ teaspoon kosher salt
¼ teaspoon black pepper
Fresh lemon slices

Directions: Combine all the ingredients in a large zip-top plastic bag. Seal bag, shake well to coat. Place asparagus on a grill rack or in a grilling basket coated with cooking spray; grill 3 minutes or until lightly browned, turning frequently. Garnish with lemon slices, if desired. Serve immediately

Smashed Potatoes

Ingredients:
1 ½ pounds small yellow-fleshed potatoes, such as Yukon Gold
¼ cup olive oil
1 teaspoon butter, melted
1 tablespoons balsamic vinegar
3 cloves garlic, minced
1 teaspoon dried rosemary
½ teaspoon dried sage
½ teaspoon dried thyme
½ teaspoon dried savory l (Dried savory can be difficult to find; feel free to substitute ½ teaspoon dried marjoram or oregano instead).
½ teaspoon sea salt
½ teaspoon black pepper.

Directions:
Put potatoes in a saucepan, cover with salted water by 1 inch, and bring to a boil. Reduce heat and simmer potatoes until tender but not mushy, about 20 minutes. Drain and cool to warm. If it helps you with planning and timing, the potatoes can be boiled a full hour ahead and drained and cooled before baking.
While potatoes cook, preheat oven to 450◦F. Line a baking sheet with parchment paper. Stir together remaining ingredients in a bowl.
Arrange potatoes in a single layer on prepared baking sheet, and lightly press down on potatoes with a wooden spoon to partially crush them. Spoon some oil-herb mixture over each potato.
Bake until edges of potatoes are beginning to crisp, about 25 minutes. Cool 5 minutes before serving.
