CHICOPEE, Mass. (Mass Appeal) – Slow cookers are a busy family’s best tool in the kitchen when it comes to making dinner, but you can also use it for sides and desserts! Food and Enteraining Expert Liz Corbett shared some delicious ideas!
Slow Cooker Quinoa Chili w/ Chicken
1 cup quinoa, rinsed
(1) 28 oz. can diced tomatoes ( or crushed)
(1) 14 oz. can diced tomatoes with green chilies ( or 1 diced jalapeño)
(2) 16 oz. cans black beans, rinsed and drained
(1) 15 oz. can corn, drained
3 cups chicken stock *
2 large chicken breasts, thawed *
1 teaspoon garlic powder
2 teaspoons cumin
1 teaspoon crushed red pepper
2 teaspoons chilli powder ( may add 1/2 red pepper and chili powd. for less ‘heat’)
Vegetarian option: Leave out chicken and sub. vegetable stock for chicken stock
All ingredients go into crockpot with chicken on the bottom, and give a quick stir. Cook on high for 6-8 hrs. (check for the first time at 6 hrs.) or on high for 4-7.
shred chicken with two forks, return to mix and stir.
Serve hot with your favorite toppings: shredded cheese, sour cream, avocado, etc.
Slow Cooker Mashed Potatoes
5 pounds of potatoes,preferably not baking potatoes.
1 cup of chicken or vegetable stock.
Peel potatoes and leave whole, or scrub and leave skin on.
Place in greased (or sprayed) crockpot, and leave covered for 4 hrs. on high.
At 4 hrs, turn to ‘warm’ and mash them right in the crockpot and add your favorites like milk, sour cream, butter, etc. until desired consistency.
They will stay warm in the crockpot to serve with your meal.
This is a great idea for feeding a crowd. No pot to watch over the stove.
This makes ALOT, so serve plenty of people, or make potato pancakes, etc with any leftovers.
Hot Fudge Slow Cooker Cake
1 cup all purpose flour
6 Tablespoons baking cocoa
2 teaspoons baking powder
1 3/4 cup brown sugar, packed
1 1/2 cups of chocolate chips
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 3/4 cups boiling water
1/2 cup milk
2 Tablespoons soft butter
Combine 1 cup brown sugar, flour, 3 tablespoons of cocoa, baking powder and salt.
Combine milk butter and vanilla in another bowl and combine with dry ingredients
Spread mixture into 3 qt. slow cooker, (coated with spray) sprinkle with chocolate chips.
In another bowl: combine remaining brown sugar, and cocoa, stir in boiling water. Pour over batter and do NOT stir.
Cover and cook on high for 4-4.5 hrs. Until toothpick near center comes out clean. Serve warm with ice cream or whipped cream.

1/2 cup apple juice
3/4 cup sugar
1/4 tsp ginger
1/4 tsp nutmeg
1/8 tsp clove
Cook in the slow cooker for 8 hours on low
