Two 7-inch flour tortillas
4-6 tablespoons tomato sauce (see below)
1/3 cup grated mozzarella
Other possible toppings to add:
2 or 3 pitted olives, chopped
fresh basil leaves, sliced
1 tablespoon diced red bell pepper
2 mushrooms, sliced and sautéed in a little oil
1 tablespoon freshly grated Parmesan
Preheat the oven to 400°F
1. Put the tortilla on a baking sheet (not greased) and spread with the tomato sauce.
2. Sprinkle with the cheese and any other preferred toppings. Bake for 8 to 9 minutes, until the cheese has melted and the base is crisp.
3. Cut into triangles and allow to cool slightly before serving
Fast Pizza Sauce
1 28 oz can tomato puree
¼ cup grated parmesan
2-3 teaspoons dried oregano
salt and pepper to taste
1. Combine all of the ingredients. You don’t even need to heat it
2. Makes almost 1 quart, enough for approximately 10 Tortilla Pizzas
6 oz semi sweet chocolate
1/4 cup chocolate syrup
8 tablespoons (1 stick) unsalted butter, at room temperature
2 eggs, lightly beaten
1 teaspoon vanilla extract
3/4 cup sugar
pinch (1/8 teaspoon) salt
1/2 cup flour
1 cup chopped walnuts (optional)
Preheat oven to 350°. Butter and flour an 8 inch square baking pan. Set it aside
Melt the chocolate (low heat, double boiler, microwave, etc. If using low heat, stir almost constantly). Add the syrup after it’s melted. Stir well. Remove the pan from the heat, and add the butter. Beat until the mixture is smooth. Stir in the vanilla and eggs. Mix thoroughly.
In a mixing bowl, sift or whisk together the sugar, salt, and flour. Add this to the chocolate mixture and blend thoroughly. Stir in the (optional) walnuts.
Pour the batter into the pan, and bake until just cooked, approximately 30 minutes.
After the brownies have cooled for 5 minutes, cut them to the desired size. You can wait until they’re cool, but the top will get crusty and they won’t cut evenly.
Hot Fudge Sauce
1 cup whipping cream
1/2 cup light corn syrup
6 ounces semisweet chocolate, chopped
6 ounces bittersweet (not unsweetened) chocolate, chopped
Bring cream and corn syrup to simmer in heavy medium saucepan. Remove from heat. Add all chocolate and stir until melted and smooth. Serve over ice cream.
Can be made 2 days ahead. Cover and refrigerate. Rewarm Hot Fudge Sauce over medium-low heat just until heated through before serving.
