CHICOPEE, Mass. (Mass Appeal) – The holiday season can get expensive, but you don’t need to spend a lot to make dinner for your family. Chad Flasinski, Kitchen Manager from Taylor’s Tavern in Greenfield, showed us how to create a delicious roast pork dinner that will feed a family of 4 for under $20!
Roast pork dinner with roasted red potatoes and sauteed zucchini
2-2.5lb pork roast
6 red potatoes, quartered
1 large or 2 medium zucchini, cut on a bias
Fresh rosemary, To Taste
Salt and pepper
2 cloves of garlic
Put the roast in a pan with room around the edges. Season with salt, pepper and sprig of rosemary.
Take your potatoes and toss with 10-15 rosemary leaves, salt, pepper and oil.
Place around the roast in the pan. In the oven for 45-55 minutes. Internal temp of 145+.
Place roast on a plate covered while you sauté the zucchini and make your gravy. Heat a skillet pan to just before smoking, about 2 min.
Then add zucchini and garlic till they start to Brown then add your wine and a little S&P. Toss a few Times and shut off.
Take your sauce pot and melt 4-5 tablespoons of butter and add flour till it becomes a wet Sandy beach, then take the drippings from your roasting pan and put them the saucepot add your bouillon cube and 2 cups of water(made separate) and bring to a simmer.
Simmer for 5 minutes while your slicing the pork.
Total cooking time: 65-70 minutes.
