Budget friendly roast pork dinner

CHICOPEE, Mass. (Mass Appeal) – The holiday season can get expensive, but you don’t need to spend a lot to make dinner for your family. Chad Flasinski, Kitchen Manager from Taylor’s Tavern in Greenfield, showed us how to create a delicious roast pork dinner that will feed a family of 4 for under $20!

Roast pork dinner with roasted red potatoes and sauteed zucchini

Ingredients:
2-2.5lb pork roast
6 red potatoes, quartered
1 large or 2 medium zucchini, cut on a bias
Fresh rosemary, To Taste
Salt and pepper
2 cloves of garlic
bouillon cube

Directions:
Put the roast in a pan with room around the edges. Season with salt, pepper and sprig of rosemary.
Take your potatoes and toss with 10-15 rosemary leaves, salt, pepper and oil.
Place around the roast in the pan. In the oven for 45-55 minutes. Internal temp of 145+.
Place roast on a plate covered while you sauté the zucchini and make your gravy. Heat a skillet pan to just before smoking, about 2 min.
Then add zucchini and garlic till they start to Brown then add your wine and a little S&P. Toss a few Times and shut off.
Take your sauce pot and melt 4-5 tablespoons of butter and add flour till it becomes a wet Sandy beach, then take the drippings from your roasting pan and put them the saucepot add your bouillon cube and 2 cups of water(made separate) and bring to a simmer.
Simmer for 5 minutes while your slicing the pork.
Total cooking time: 65-70 minutes.

Salt
Bouillon cubes
Cheap wine

These things will bring out flavor, thicken your foods and allow you to get a great sear without burning expensive olive oil!

Know your portions! How much is too much?
Buying the right ingredients! Fresh vs. frozen…etc
Learn to cut! This helps by being able to choose from a wider assortment of product
Be creative. Things that are normally boring can be a star!
You can buy a lot. People think that it’s impossible to be fed well with only 20 bucks.
Last but not least, time is your best friend. Slow cooking, prep time are just a few of the thing that separate restaurant meals from home. No microwaving!!!
