Homemade calzones

Calzones

For the Dough:

7 tsp active dry yeast
1 1/4 cup lukewarm water
Pinch sugar
3 1/4 cups of flour
1/4 tsp sea salt
1 tbsp extra virgin olive oil

Directions:
Add yeast to warm water w pinch sugar. Set aside until frothing.
Mix flour, salt, olive oil and then yeast water.
Keep mixing until consistency is elastic and does not stick to your fingers.
Roll into a ball and place into bowl cover with warm towel so it can rise.

For the Filling:
3 cups ricotta
2 cups mozzarella
1 cup parmigiana-reggiano mixed together
Dash sea salt and pepper to taste.

Directions:
Let dough rise twice. When ready cut dough into sections and use hands to spread out each calzone flat. Fill with cheese mixture and fold into “sock” sealing sides.
Warm quarter inch of olive oil in pan and heat. Put little piece of dough in oil when bubbles, oil is ready.
Put calzones in oil and when starts brown, flip it until golden brown on each side. Remove from oil and lay on paper towel on brown paper bag lined plate. Continue until all done.
Serve with warmed marinara sauce.
