Turkey dinner casserole with Ann Macey

CHICOPEE, Mass. (Mass Appeal) – Some people look forward to turkey leftovers nearly as much as they do Thanksgiving dinner! Ann Macey, Author of Ann’s Table for Two, showed us a delicious way to use those tasty leftovers!

Turkey Dinner Casserole

1/3 C. boiling water
1 tsp. cooking oil
1 C. chicken flavor stuffing mix
1/2 can (about 1/2 C.) condensed cream of chicken soup
1/4 C. milk (or half & half)
Pinch of poultry seasoning
5 oz. diced, cooked turkey meat
1/3 C. cooked, diced carrots
1/4 C. frozen peas

Combine water, oil, and stuffing mix in a medium bowl. In a 1 qt. casserole that has been sprayed with nonstick cooking spray; press the stuffing into the bottom and up the sides making a nest. In the same medium mixing bowl; combine soup, milk and poultry seasoning with a wire whisk. Stir in turkey, carrots, and peas and spoon mixture into stuffing nest. Bake in a 375 degree oven for 30-35 minutes or until hot.
