CHICOPEE, Mass. (Mass Appeal) – After a long day at work the last thing busy moms and dads want to do is slave over a stove for hours making dinner. Slow cookers can help make dinner easy again! Personal Chef Bill Collins from showed us how to make an easy Tex-Mex pulled pork!

Slow Cooker Tex-Mex Pulled Pork

1 28 oz can diced tomatoes
1 6 oz can tomato paste
1 teaspoon dried oregano
1 teaspoons salt
2 teaspoons chili powder
2 teaspoons cumin
1 onion, peeled and sliced
4 cloves of garlic, peeled and minced
4 pounds pork shoulder or roast

Place the tomatoes, tomato paste, oregano, salt, 1 teaspoon chili powder, and 1 teaspoon cumin into the slow cooker and stir until it’s all combined.
Rub the remaining chili powder and cumin onto the pork
Mix the onions and garlic into the tomato mixture, and place the pork, fat side up (if there is any), on top.
Place the cover onto the slow cooker, and cook on low for approximately 8 hours.
