Stuffed Cajun shrimp panzanella tomatoes

CHICOPEE, Mass. (Mass Appeal)   Looking to use those extra tomatoes? Stuff some deliciousness into them!  Kathleen Delaney, Personal Chef from MyGreatGrapes.com showed us how to make Stuffed Cajun shrimp panzanella tomatoes.

Stuffed Cajun shrimp panzanella tomatoes!

  • 1lb of uncooked shrimp
  • 1 baguette
  • 12 blanched asparagus
  • 2 tbs olive oil
  • salt
  • pepper
  • 1 clove garlic
  • 3 med to large tomatoes (hulled)
  • Cajun seasoning (homemade or saizon)
  • 1teaspoon of srichi sauce
  • 1 shallot
  • 1/2 cup white wine
  • 2 slices of prosciutto(optional)

Directions:

  • Hull Tomatoes
  • cube baguette & asparagus
  • saute all ingredients in olive oil
  • mix all ingredients
  • stuff tomatoes
