Sweet and sour pork with Ann Macey

CHICOPEE, Mass. (Mass Appeal) – Do you want to make a delicious dinner without dirtying every pot and pan in your kitchen? Ann Macey, from Ann’s Table for Two, showed us how to make an easy skillet sweet and sour pork dish, that can be on your table in less than 30 minutes!

Sweet & Sour Pork

1/3 C. dark Russian salad dressing
1 T. raspberry jelly or jam
1 T. soy sauce
1 tsp. onion soup mix
1/2 tsp. minced garlic
1/8 tsp. ground ginger
10-12 oz. pork fillets
2 T. flour
1 T. cooking oil

In a small bowl; combine salad dressing, jelly, soy sauce, soup mix, garlic, and ginger with a wire whisk. Set aside.
Dredge pork fillets in flour. Heat oil over high heat in a 10″ skillet that has been sprayed with nonstick cooking spray.
When the oil is hot, reduce heat to medium-high and cook fillets for about 1 minute on each side.
Reduce heat to low and pour dressing mixture over fillets. Cover and simmer for 6-8 minutes.
Turn fillets over, uncover and simmer for another 6-8 minutes just until pork is cooked through. Serve immediately.

NOTES: As a substitute; apricot preserves, peach jam, or grape jelly have worked well with this recipe. The thickness of the pork will determine the length of cooking time.

VARIATION: Sweet & Sour Chicken: Substitute 10-12 oz. of chicken tenders for the pork fillets.
