Gluten-Free Pear Cranberry Crisp

CHICOPEE, Mass. (Mass Appeal) – Going gluten-free doen’t mean you have to go dessert-free! Leslie Cerier, The Organic Gourtmet from, showed us how to make a delicious gluten-free pear cranberry crisp.

Pear Cranberry Crisp

1 cup apple juice
3 Pears
3/4 cup frozen cranberries
2 cups rolled oats
1/2 cup teff flour
1/3 cup extra-virgin coconut oil
1/3 cup maple syrup
1 tsp cinnamon
1/2 tsp sea salt||||||

Preheat the oven to 350ºF.
Spread the apples over the bottom of an 8-inch square baking dish. Put the rolled oats, teff flour, oil, maple syrup, cinnamon, and salt in a medium-size bowl and stir until thoroughly combined. (You may want to use your hands.) Crumble the mixture over the cranberries and pears, then pour the juice over the top.
Bake for about 30 minutes, until the topping is crisp and the pears are tender. Serve warm.
