Roasted Tomatoes with Ann Macey!

CHICOPEE, Mass. (Mass Appeal) – Summer tomatoes are lush, flavorful, and abundant! Ann Macey, from Ann’s Table for Two, showed us some fun ways to serve up this sweet summer fruit.

Roasted Tomatoes

1 pt. (10 oz.) grape tomatoes
1 T. cooking oil
2 T. chopped onion
1/2 tsp. minced garlic
1-2 T. fresh, chopped basil

Cut tomatoes in half (or finely chop). In a medium bowl, toss all ingredients.
Line a rimmed cookie sheet with foil and spray with nonstick cooking spray.
Spread tomatoes in a single layer.
Allow to roast in a 425° oven for 10 minutes.
Toss and roast for another 5-10 minutes according to your desired tenderness.

NOTES: If serving chilled, the tomatoes will hold a firmer texture if you cook them for only 10 minutes.

Roasted Tomato Spread

2 oz. cream cheese, softened
1/4 C. Feta Cheese
2 T. chopped scallions
1/4 C. chilled roasted tomatoes

Combine all ingredients and refrigerate until ready to serve. Serve with thin sliced, toasted French bread or crackers. May also be served with raw veggies.
