Easy Blueberry Smoothies and Blueberry Sauce!

CHICOPEE, Mass. (Mass Appeal) - Picking your own fresh blueberries is a great way to save money, have fun with your family and enjoy some delicious treats! Leslie Cerier, the Organic Gourmet from LeslieCerier.com, shared some fresh blueberry recipes!

Homemade Blueberry Sauce
Blueberry sauce is delicious any time of day. It is heavenly on lemon cake, corn bread, pancakes, waffles, yogurt, and ice cream.

Ingredients:
1 Quart Blueberries (fresh or frozen)
2 Tbsp Organic Coconut Sugar
1 Tbsp Arrowroot Powder
1 Tablespoon Water (cold)

Directions:
Place the blueberries in a 1-quart saucepan and sprinkle coconut sugar on top.
Simmer on low for 15 minutes, or until blueberries are soft and juicy.
Dissolve arrowroot in a small bowl with cold water.
Stir into blueberries for a minute or two, or until sauce thickens.
If desired add more coconut sugar for a sweeter taste.

Blueberry-Coconut Breakfast Shake
This breakfast shake is so thick and delicious that it reminds me of the malteds I use to get when I was a kid. And between the blueberries, coconut milk, hemp seeds, and almond butter, it’s a real nutritional powerhouse. You might find, as I do, that a couple of glasses will keep you going for most of the day, or for a great breakfast, have one glass with a Corn Muffin.

Ingredients:
2 cups fresh or frozen blueberries
1 (14-ounce) can coconut milk
5 tablespoons almond butter
1/4 cup organic hemp seeds
¼ cup water
3 tablespoons honey or maple syrup
1 teaspoon vanilla extract

Directions:
Put all of the ingredients in a blender and blend until smooth. Serve immediately.

Variation:
For a creamy mousse, refrigerate overnight, and eat it with a spoon the next day!

Blueberry Breakfast Smoothie with Chia Seeds

Ingredients:
1 tablespoon organic chia seeds or ground chia seeds
1/3 cup water
3/4 cup fresh or frozen blueberries
3/4 cup plain grass raised organic yogurt (goat or sheep is my preference)
2/3 cup apple juice
2 tablespoons organic coconut sugar*
1 teaspoon vanilla extract

Directions:
Put chia seeds in a cup with water. Let stand 15 minutes*. Add to blender with all the other ingredients. Puree, taste and adjust the sweetness if desired. Drink immediately. Bon Appetite!

NOTES:
You can make this chia gel the night before, if you like, and even keep it in the refrigerator for several days.
Anti-oxidant rich and tasty, this smoothie is quick and easy to make. Try it for a snack or breakfast.
Feel free to swap your favorite yogurt (pasture raised cow or sheep yogurt are also good choices.
Other flavors of juice would also be fine. Feel free to use other berries: raspberries, and strawberries are great, too.

The Maqui Berry Powder and Acai Powder Smoothie

Ingredients:
1 cup organic fresh or frozen blueberries or any berry of your choice
¾ cup organic plain goat yogurt or any yogurt of your choice
¾ cup organic tart cherry juice(or any juice of your choice)
2 Tablespoons Organic Coconut Palm Sugar
Optional: 1 Tablespoon organic Acai Powder
Optional: 1 Tablespoon organic Maqui Powder
1 teaspoon Organic Vanilla Extract

Directions:
Combine all the ingredients in a blender and process until smooth. Taste, and if desired, add additional palm sugar for a sweeter flavor.
