CHICOPEE, Mass. (Mass Appeal) – Tomato season is here, and what better way to utilize your crop than making your own sauce! Michael Tesoro the Owner, & Chef at Ooma Tesoro’s Marinara showed us how to make a quick and easy homemade tomato sauce.
Homemade Tomato Sauce (Sciue-Sciue)
1/2 cup extra virgin olive oil
Bulb of garlic (10-12 cloves)
1 medium-large sweet onion
1 yellow summer squash
1 green zucchini
1 lb cherry tomatoes
Fresh ground pepper
1 lb spaghetti
Parmigiana Reggiano cheese
Boil water in large pot with 3 tablespoons of sea salt
In a small pan heat 1/2 cup oil smash garlic cloves and brown. Remove garlic and add cherry tomatoes.
In a large pan cold add other 1/2 cup olive oil and add chopped onion and caramelize then add chopped zucchini and summer squash. Salt pepper
