Sweet and Spicy Dry Rubbed Kielbasa with Massaged Kale and Herb Gremolata

CHICOPEE, Mass. (Mass Appeal) – Putting a dry rub on your meats can enhance the flavor without adding extra fat. Derek Robert, Chef from Hinge in Northampton, and Bartender nick Williamson, showed us how to make a dry rubbed kielbasa with a gremolata!

Sweet and Spicy Dry Rubbed Kielbasa with Massaged Kale and Herb Gremolata

Dry Rub:
1/2 cup brown sugar
2 Tbsp granulated garlic
2 Tbsp smoked paprika
2 Tbsp dry mustard
2 Tbsp cayenne pepper
Salt and black pepper to taste

Massaged Kale:
1 lemon worth of zest and juice
2 Tbsp garlic oil
Salt and pepper to taste

Gremolata:
1/2 bunch of cleaned flat leaf parsley
10 basil leaves
2 cloves fresh garlic
4 oz. crumbled Manchego cheese
1 cup of good quality olive oil
Salt and pepper to taste
