Flourless Gluten-Free Blueberry Banana Muffins

CHICOPEE, Mass. (Mass Appeal) – Are you searching for a muffin that’s not only flourless and gluten-free but tasty too? Food and Entertainment Expert Liz Corbett showed us how to make healthy blueberry banana muffins!

Blueberry Banana Muffins

Ingredients: 
2.5 cups old fashioned oats
1 cup plain greek yogurt
2 eggs
1/2 cup honey
2 tsp baking powder
1 tsp baking soda
2 tbsp ground flax seed
1 tsp vanilla
2 ripe bananas
3/4 C blueberries (may sub ¾ cup chopped nuts or raisins)

Directions:
Preheat oven to 400. Mix everything together, and pour into greased muffin tins. Bake 18-20 minutes.
For a finer texture, you may process the oats until course meal consistency or flour-like.
