Grilled Chipotle-Rubbed Steaks and Potatoes with Buckley Healthcare Center

Grilled Chipotle-Rubbed Steaks with Cilantro & Lime Butter

Ingredients:
4 tablespoons unsalted butter, softened
2 Tablespoons Fresh Cilantro
1 small garlic clove, minced (about 1/2 teaspoon)
1/4 teaspoon finely grated zest from 1 lime
1 tablespoon fresh juice from 1 lime
Kosher salt
1 1/2 teaspoons sweet paprika
1 1/2 teaspoons ground cumin
1 1/2 teaspoons chipotle powder
Four thick, boneless steaks, such as ribeye or hanger, 10- to 12-ounces each
Vegetable oil, for the grill

Directions:
Combine the butter, garlic, cilantro, lime zest, lime juice, and a salt to taste. Set aside. Combine the paprika, cumin, and chipotle powder in a small bowl. Sprinkle the steaks with plenty of kosher salt, then evenly sprinkle the spice mixture over them and rub into the meat.
Oil the grates of the grill (or grill pan) and preheat over high heat until smoking. Reduce heat to medium high and add steaks. Cook without moving until well-charred, about 4 minutes. Flip steaks and continue to cook until center of steaks register 125°F on an instant-read thermometer for medium-rare, 135°F for medium, or 145°F for well done. Transfer to a platter and allow to rest for at least 5 minutes, adding the Cilantro & lime butter after a few minutes to melt from the residual heat.
Slice the steaks and serve immediately.

Gorgonzola Toast

Ingredients:
1 loaf ciabatta bread, halved horizontally, each half cut crosswise into eight 5×3-inch slices
Olive oil
1 cup creamy Gorgonzola cheese
1 teaspoon chopped fresh thyme

Directions:
Brush cut sides of bread with olive oil. Grill, cut side down, until slightly charred, about 1 minute. Spread Gorgonzola onto grilled side of each bread slice. Sprinkle cheese with ground black pepper and reserved spice mixture. Return bread to grill, cheese side up. Grill until cheese begins to melt and bottom of bread is slightly charred, about 1 minute. Sprinkle bread with thyme; place 2 slices on each of 4 plates. Serve steaks with bread.

Grilled Potatoes

Ingredients:
2 pounds red potatoes, quartered
1/2 cup water
1/2 cup light mayonnaise
1/4 cup dry white wine 2 teaspoons crushed dried
rosemary
1 teaspoon garlic powder
wooden skewers, soaked in water
for 30 minutes

Directions:
1. Place potatoes and water in a microwave safe bowl. Cook potatoes in microwave on high until just tender, about 15 minutes, stirring half-way through. Drain potatoes and allow to steam for a few minutes to dry.
2. In a large bowl, stir together mayonnaise, wine, rosemary, and garlic powder. Mix in drained potatoes and toss to coat. Marinate, covered, in the refrigerator for 1 hour.
3. Preheat an outdoor grill for high heat and lightly oil grate.
4. Remove potatoes from marinade, and skewer. Grill, covered, for 6 to 8 minutes, brushing occasionally with marinade, turning half-way through. Remove potatoes from skewers and serve hot
