CHICOPEE, Mass. (Mass Appeal) – All you need is five ingredients and you can whip up a sweet and easy cheesecake! Ann Macey, from Ann’s Table for Two showed us how to make it!
Baked Mini Cheesecakes
Yield: 6 mini desserts
8 oz. cream cheese
1/4 C. sugar
1/4 tsp. vanilla extract
In a medium bowl, beat cream cheese with an electric mixer. Add sugar, extract, and egg and beat until smooth.
Line 6 muffin cups with foil muffin liners and pour batter into liners.
Bake in a 350° oven for 25-27 minutes. Cheesecake is done with toothpick inserted in center comes out ‘sticky’ but not wet. Over baking will result in a dry product.
After allowing to cook completely, top with fresh berries.
Refrigerate until ready to serve.
NOTES: Cheesecakes will puff up during baking and sink immediately after being removed from the oven. This will create a ‘well’ to fill with fresh berries or pie filling.
