Ince Kebin Fried Chicken

Ingredients:
6 1/2 lbs chicken
Vegetable oil for frying

Marinade:
8 shallots
1/2 Tsp chili powder
2 Tbsp coriander
2 Tsp cumin
2 Tsp fennel
1/2 Tsp cloves
1 Tsp cinnamon
2 Tsp turmeric
2 Tsp black pepper
2 Tsp salt
1/2 cup coconut milk

Sauce:
2 Tsp mustard powder
2 Tbsp sugar
6 Tbsp Worcestershire sauce
4 Tsp lime juice
4 Tsp soy sauce
6 red chilies

Directions:
Marinate chicken pieces with the marinade for 3-4 hours or overnight.
Heat oil until hot and deep fry marinated chicken until almost cooked.
Remove and drain in colander.
Reheat oil and deep fry almost cooked chicken once more to a golden brown.
Remove chicken to a plate and serve hot with sauce.

NOTE: Chicken can be fried up to 1 hour ahead and kept warm in the oven until ready to serve.

Tamarind Shrimp

Marinade:
3 Tbps tamarind pulp
6 Tbsp warm water
1 Tbsp soy sauce
1 Tsp sugar
¼ Tsp ground white pepper
½ Tsp salt or to taste
1 lb shrimp peeled & deveined
3 Tbsp canola oil

Directions:
Pinch the tamarind pulp into smaller pieces and place in a bowl with the warm water and set aside for about 10 minutes or until the pulp is softened. Squeeze the pulp in between your fingers to dissolve it in the water resulting in a viscous juice. Strain and discard the seeds and fibers.
Combine the tamarind juice, soy sauce, sugar, white pepper and salt in a bowl, add the shrimp and let marinate for about 15 minutes.
Heat a wok or fry pan on medium high heat, add the oil, and when hot, add the marinated shrimp. Fry until done and slightly burnt, about 3 minutes on each side. Serve immediately.
