Philly Cheese “Steak” with Portabella Mushrooms

Philly Cheese “Steak” with Portabella Mushrooms
Makes four servings

2 tablespoons olive oil
1 large onion, peeled and sliced
4-6 portabella mushroom caps, thinly sliced
salt and pepper to taste
4 slices American cheese singles (organic cheese tastes VERY good)
4 sub rolls

1. In a large skillet, over a medium heat, add the olive oil. Sauté the onion for 5-10 minutes, until it’s starting to cook through. Season with a bit of salt and pepper.
2. Add mushrooms and cover. Sautee for five minutes, until mushrooms are cooked through. Season to taste with salt and pepper.
3. Place cheese on top, and let it sit for a few moments, to begin melting. Then, stir the cheese into the mushrooms and onions.
4. Serve immediately in rolls
