CHICOPEE, Mass. (Mass Appeal) – Add some green and luck of the Irish to your St. Patrick’s Day celebration! Nancy Parent, Owner of Tiers of Joy in Ludlow, showed us how to make Lucky Leprechaun Cookie Bark!
Lucky Leprechaun Cookie Bark
14 mint oreos (can also use regular oreos if you prefer)
1.5 cups of pretzels, broken into pieces
1 lb. of White chocolate
1 cup of Green M&Ms (can mix in some brown as well)
Place a piece of wax paper on a cookie sheet.
Break the oreos and pretzels. Spread these pieces along with ¾ c of M&Ms over the wax paper
Melt the chocolate in a microwave safe container in 30 second bursts. After 30 seconds, stir the chocolate and return to the microwave for another 30 seconds in the microwave. Repeat these steps until the chocolate is melted and smooth.
Drizzle the melted chocolate over the cookie mix. Spread with a spatula if necessary
Sprinkle with green and white sprinkles.
Put it in the refrigerator for several minutes until the chocolate is set, but the bark is not really hard.
Remove from the refrigerator and break into pieces.
This bark is delicious as a treat, but can also be used to make ordinary desserts pretty and festive. Stick a piece of the bark in a bowl of ice cream or a dessert cup of pudding or mousse for a fun dessert!
