Celebrate Purim and Make Some S’Moresentashen!

SPRINGFIELD, Mass. (Mass Appeal) – This Sunday the Jewish community here in Western Mass. will celebrate Purim, the Jewish holiday which celebrates the Jewish survival from enemies in ancient Persia.

Jeff Rembrant from the Jewish Community Center in Springfield, shared more about their upcoming Purim Carnival and showed us how to make S’Moresentashen.

Graham Cracker Dough:
2 1/2 cups (10 ounces) unbleached all-purpose flour
1 cup (4.5 ounces) graham flour (whole wheat)
1/4 cup + 1 tablespoon (2 ounces) brown sugar
1 teaspoon baking soda
1 teaspoon kosher salt
3 ounces unsalted butter
1/2 cup honey
1 teaspoon vanilla extract
1/3 cup water
1 teaspoon cinnamon (optional)

Filling and Topping:
Chocolate Chips
Marshmallow Fluff

Preheat oven to 350 degrees.
Combine all the ingredients in a stand mixer with the paddle attachment. Mix until smooth and well combined, scraping down the bowl to make sure the butter is not stuck to the sides. Roll out dough to about ¼ inch thickness. Cut dough into circles. Put 4 or 5 chocolate chips in the middle of each circle and pinch the circles into the tri-corner shape. Bake for 15 to 20 minutes or until cookie is set. Cool and serve with a dollop of marshmallow fluff on top.
