Chicken and bacon…all bundled up in a delicious dinner? Ann Macey, the author of Ann’s Table for Two, showed us how to make this quick and tasty dish!
Bacon Chicken Bundles
2 chicken breasts, boneless, skinless
3 bacon slices (NOT ‘Ready-to-Serve’)
2 T. brown sugar
1 T. dry taco seasoning mix
Place a baking rack in a foil lined 9″ X 9″ baking pan. Spray rack with nonstick cooking spray. Set aside.
Fold the thinner end of the breast under creating a round ‘bundle’.
Wrap one slice of bacon around the entire diameter of each breast. Cut the other slice of bacon in 4 pieces and lay 2 pieces on top of each bundle.
In a small bowl, combine the sugar and taco seasoning. Dredge each prepared breast in sugar mixture being careful to keep the bacon wrapped. Place each breast, bacon side up, on prepared baking rack.
Bake in a 350° oven for 30-35 minutes then broil for 2 minutes to crisp the bacon. Chicken is done when juices run clear.
