Healthy Pecan Shortbread Cookies!

CHICOPEE, Mass. (Mass Appeal) – Looking for a cookie that only has a few ingredients, is easy to make and tastes amazing? Personal trainers Ryan Woods and Tyler Pratt from EnFuse Fitness in Enfield, Connecticut showed us how to make healthy gluten-free pecan shortbread cookies.

Pecan Shortbread Cookies

Ingredients:

  • 2 1/2 cups almond flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 cup coarsely chopped toasted pecans
  • 1/2 cup grape seed oil
  • 6 tbs agave nectar
  • 1 tbs vanilla extract

Directions:

  1. Combine all the ingredients in a bowl, bake at 350 degrees for 10 minutes, or until cookies are golden brown!
