CHICOPEE, Mass. (Mass Appeal) CISA or “Community Involved in Sustaining Agriculture” helps build connections between farmers and our local communities! This February you can enjoy a bounty of locally grown vegetables along with workshops, food swaps, music and so much more at winter farmers’ markets throughout the Pioneer Valley.

Program Coordinator Clare Morenon CISA or “Community Involved in Sustaining Agriculture”shared more about some upcoming Winter Fares and showed us how to make a delicious winter coleslaw!

Winter Vegetable Slaw


  • 2 carrots
  • 2 radishes
  • 1 celeriac
  • Half a cabbage
  • ½ onion


  • 1 lemon (or 3TBS bottled juice)
  • 1 cup  yogurt
  • 2 tablespoons mustard
  • Handful chopped parsley
  • Olive oil
  • Sea salt
  • Freshly ground black pepper


  1. Wash, peel as needed, and grate the carrots, radishes, and celeriac. Remove outer leaves and core cabbage, then slice very finely. Mince onion.
  2. Mix lemon juice, yogurt, and mustard together. Add parsley, a few shakes of olive oil, and salt and pepper to taste. Stir dressing into the shredded vegetables to taste. Leftover dressing can be used as a vegetable dip.
