Healthier Cheeseburger Chowder

CHICOPEE, Mass. (Mass Appeal) Do you love a good chowder but not the guilt that comes with eating all those extra calories? Jennifer Mar, Owner of On The Hill Restaurant in Feeding Hills, showed us how to make a healthier cheeseburger chowder that's sure to please your entire family!

Healthier Cheeseburger Chowder

Ingredients:

  • 3 C. Broth
  • 4 C. Potatoes
  • 2 Carrots
  • 2 Celery Stalks
  • 1/4 C. Green Pepper
  • 1 Jalapeno
  • 1/2 lb. Ground beef
  • 1 1/2 C. Non-Fat Evaporated Milk
  • 3 Tbsp. Flour (or Gluten-free Corn Starch)
  • 1/2 lb. Reduced fat cheese
  • 1/2 Tsp. Paprika
  • 1/2 Tsp. Garlic powder

Cornbread

Ingredients:

  • 1 cup unbleached flour
  • 1 cup cornmeal
  • 1/4 cup white sugar
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup nonfat plain yogurt
  • 2 eggs

Leafy Green Salad

Ingredients:

  • 1 head iceberg
  • 1 head Boston Bibb
  • 1 bag masculin mix (also called “spring mix”)
  • 1 tomato
  • 1 bag radishes
  • 1 cucumber
  • 1 green pepper
  • 1 can black olives
  • Lemon juice & olive oil for dressing
